Time it Takes:
Preparation: 30 Minutes + Cooling
Cooking: 10 - 15 Minutes
- 1 cup unsalted butter at room
- 1/2 cup icing sugar
- 2 teaspoons vanilla extract
- 1-1/2 cups flour
- 1 cup toasted oats
- 1 cup chocolate chips
- Sugar for dipping
1. Toast  the oats gently in a wok or frying pan
over medium low heat, stirring constantly
until just becoming golden in colour (approx.
10 - 15 minutes). Let oats cool completely. If
desired, put into a seive and shake out the
browned bits of oat dust.
2. Preheat oven to 300
3. In a large bowl, cream the sugar, vanilla and
butter until very smooth. 
4. Add the flour and mix until well combined.
5. Add the cooled toasted oats and mix well.
6. Add the chocolate chips and mix until
evenly distributed throughout the dough. 
7. Form into 1" balls and place on a non stick
(or parchment covered) baking sheet about
2" apart.
8. Butter a cookie press or the bottom of a
glass and dip into the sugar, then press the
dough to about 1/4 inch thickness
9. Bake 10 - 15 minutes until golden. Cool on
cookie sheet for 15 minutes then transfer to
rack to cool completely.
